It all really depends. If you're looking to host a server for ten of your friends playing vanilla survival a few times a week, you can probably get away with finding something cheap with fairly low specs. If you're doing a lot of PVP with those friends, maybe you want to look more closely at the networking of the datacenter. On the otherhand, if you're planning to have hundreds of people connecting, you'll want very high end servers with lots of RAM and disk space (because it's really annoying losing your map and not having backups) with a solid network and load balancing.
