Whenever I try to create a Villager who sells a modified bow I would select from my list of created items the bow i wanted. This should create a villager who would sell my modified bow right? Well I can't seem to get it to work I tried making a different bow and same problem, when generating the command instead of having a bow in the selling slot it would have a stone block... Any fixes or am I just not getting it?

Have you tried to find about it on YouTube? Because over there you will search for it easily. I have searched about your problem solution on YouTube and I have found many videos in which they have explained how to use a villager trades generator.
